Brewing up business at Mandy's

The hum and chatter of a coffee shop can be heard once again at 419 W. Third St., with the opening of Mandy’s Coffee & Cafe. Opening doors for a soft open last week, owner Mandy Cardinal said she has seen a dream come to fruition.

“This started as an idea on a trip to Europe,” Cardinal said. “I was drawn to that European coffeehouse style.”

After her travels abroad sparked the idea, Cardinal spent years planning, researching and learning the business before relocating to Red Wing.

“I worked as a barista to understand the operation from all aspects in order to further the project,” she said.

A Minnesota native, Cardinal grew up in the Twin Cities. As her planning and training advanced for her own business, the appeal of Red Wing became apparent.

“I was looking for a downtown district in a smaller town,” she said.

With Red Wing fitting the bill, her family ties made the draw even stronger. Cardinal’s father and stepmother, Paul and Tracy Cardinal, own and operate Pearle Vision in Red Wing, and they also own the building which houses Mandy’s Coffee & Cafe.

“They were looking for a new tenant,” Cardinal said. “The space was perfect.”

The drink menu offers locally roasted coffee and espresso, whole leaf tea, all-natural smoothies, organic chai, iced teas and baked treats. “Mandy’s Mug” can be found the menu, featuring a cold-press coffee with cream and vanilla.

“A sandwich and soup menu will be available in the future,” Cardinal said.

Beyond the java, Mandy’s offers an artistic space for meetings, art displays, and outdoor courtyard seating.

“This is a unique and comfortable space,” Cardinal said. “I am committed to serving high-quality coffee and provide a great environment. To be near family and join this Red Wing community has been exhilarating.”
